Wiesbaden is the spa town that never got bombed and never got poor, and its drinking runs from a squatted slaughterhouse to a painted cellar under the town hall. One correction carried from the record: Hessen has issued no monument numbers for this city's listed buildings, so the register speaks in street names and parcels, and we quote it that way.

1. 1 · The Cold Open
   Kulturzentrum Schlachthof
   A club in the 1884 municipal slaughterhouse by the rail tracks, shut at the end of 1990 and occupied in 1994 by a collective that never asked permission and never left. The first bill, 5 December 1994, was two bands in the old smoking chamber, and the plenum still runs the place without bosses. What survived the wreckers is the point: two halls and the 1899 water tower by city architect Felix Genzmer, a listed monument, with the Kesselhaus stage and the 60/40 bar inside it. Order a cheap beer under the water tower and take whatever the programme throws at you, punk one night, techno the next, a flea market in the Kulturpark by Sunday. Start the road loud here; the evening gets quieter as it climbs into town.

2. 2 · The Detour
   Café Klatsch
   The left's living room in the Rheingauviertel since 1984, when a collective took over a gloomy joint called Bierfestung Barbarossa and plastered it with posters for causes won and lost. Forty one years of self management ended on 13 June 2025, when the collective folded, and the quarter refused to accept it. Supporters who had bought the building back in 2015 raised the money, renovated top to bottom and reopened the doors on 20 December 2025 as the Klatsch Genossenschaft, staffed by volunteers. Order an organic beer or the house lemonade and read the political papers still stacked by the bar. Evenings run Thursday to Saturday, with a neighbourhood cafe one Sunday a month. The respectable spa town, cross examined nightly, now in cooperative ownership.

3. 3 · The Wildcard
   Murphy's Pub
   The Altstadt does its honest drinking at Murphy's on Goldgasse, an 1893 corner house by Wilhelm Kaufmann in the city's oldest few streets. Order a pint of Guinness from the tap, or the Murphy's that named the house, with Kilkenny, cider and a shelf of whiskey behind them for the slow hours. Live music and sport on the screens do the talking; nobody in here is watching the promenade. The room fills with the town's Irish and with English speakers from the American garrison, whose record of the place runs in English while the street signs stay German. Doors go late, past two at the weekend. Cold beer, warm hearts, says the motto, and for once the motto is an accurate menu.

4. 4 · The Detour
   nero22 Weinbar & Verkauf
   A wine bar the size of a hallway at Nerostraße 22, the Bergkirchen quarter's own street, run by Thomas Schachler since 2021 and poured entirely organic. Order a 0,1 of Rheingau Riesling, Barth of Hattenheim for the sparkling, Trinks-Trinks for the still, four or five euros the glass and a third off any bottle carried home. Dancers from the state theatre borrow the floor for a night each June, and the pottery gallery next door shares the light. The casino sits five minutes and a whole century away. Around the corner stands the Schwarzer Bock, a bath house first mentioned in 1486, rebuilt after the town burned, now calling itself Germany's oldest grand hotel; its bar wears the date over the door. Mind August, when the bar closes for the Weinwoche and returns the Tuesday after.

5. 5 · The Last Call
   Ratskeller Wiesbaden
   The drinking cellar under the Neues Rathaus, raised in the 1880s by Georg von Hauberrisser, the architect Munich trusted with its own town hall. In 1890 Kaspar Kögler painted the wine cellar and Heinrich Schlitt the beer cellar, and over the door went the house creed: whether heathen, Jew or Christian, whoever is thirsty may come in. The Nazis whitewashed that welcome, a 1987 renovation destroyed the originals on cost grounds, and Eberhard Münch repainted the rooms in the old spirit, which is most of this town's century in one cellar. The taps belong to the monks of Andechs; order the Doppelbock Dunkel by the half litre, or a Bembel of Frau Rauscher Ebbelwoi if you want Hessen instead of Bavaria. The kitchen runs gutbürgerlich until an hour before close, eleven to midnight most days. Every August the Weinwoche sets up directly overhead on the Schlossplatz.
