Produce the body, preferably in the same medieval town hall square where the Hanseatic League counted its silver. Tallinn's old town runs on elk soup, dark beer and one dangerous shot, and Estonia files the evidence better than anywhere: the monuments register carries its own coordinates, and the state's alcohol notices are searchable by the name of the room itself.

The Town Hall is real: finished by the end of 1404, monument number 1199, the oldest surviving council house in Northern Europe. The tavern in its old courtroom is not, and says so with a straight face: a candlelit piece of medieval theatre run by the Olde Hansa family. Elk soup is ladled from the cauldron, you fish your own pickle out of the barrel, six kinds of pie wait in the warmer, and no forks are issued on principle. The room shut for renovation in June 2024 and came back; by the 2026 Medieval Days the soup was bubbling again. Order the elk soup and the barrel pickle and eat standing under the vaults. Theatre, yes, but the stone is six centuries older than the act, and both keep their lines.

Hell Hunt
Estonia's first pub of the free era, pouring at Pikk 39 since 1993, and the ad men who ran its birthday campaign called it the back room of the Republic. The name means the Gentle Wolf, which misleads in two languages; the beer corrects you in none. Order its own ale: the house keeps five of its own taps, pale, dark, wheat, ale and IPA, beside a shelf of guests. The company behind the bar is named Hunt Kriimsilm, for the scheming wolf of Estonian folklore, and has held the state serving notice since 2004 and a wholesale line since 2007. The kitchen feeds until late and the terrace takes the park across the street in summer. The wolf posts its mood weekly and waits open armed.

Named for its own address beside the wheel well, and the address answers: this is the old town's most defended modern room, booked solid for Estonian comfort food done with discipline. Order the braised elk roast with potato and beetroot gratin, and take the warm chocolate cake after. The famous grandmother's cakes have left the card, so ask for the living menu, not the legend. The house itself is medieval, the restaurant is young, and the founders tell only a garage band origin story about agreeing what a restaurant should never be. Reserve through the site or queue at the door; a second, smaller room waits around the corner on Niguliste. The main hearing of this road, and the one table worth planning a day around.

Valli Baar
The survivor is certified: the room, a U shaped counter with twenty one stools bolted to the floor, is cultural monument number 28313, protected since 2007 as the old town's last intact Soviet era bar interior. The panelling went up in the 1970s; whether the story starts in the sixties is argued in the register itself, and both claims stay on file. It never closed when everything else did: in May 2020 the bartender told the national broadcaster they had not lost a single day. Order a Millimallikas, once: sambuca, tequila and tabasco in one glass, a jellyfish that stings going down and testifies coming back. The same little company has kept the bar since the nineties, and the room drinks in Estonian and Russian in equal pour. Renovation waves break on this door and go back out to sea.

Out of Range: a cellar under Olevimägi where the name is a mobile network joke and the crowd is three generations of Tallinn bohemia sharing the same tired sofas. Open since 1996 and handed from keeper to keeper rather than closed; the pouring notice has been held since March 2023 by a company named Elutilk, a drop of life, which is the most honest trading name in this guide. Wikipedia has already written the cellar up in the past tense; the bar answers with DJ nights, the latest posted in late July 2026. Order the cheapest thing on the shelf, loudly, and bring cash; weekends run until morning. Punk grew up down here without ever cleaning up. The body is produced; habeas satisfied.
