Raketa Rakia Bar
The name is older than the bar. This corner by the Zaimov park fed Sofia from 1954 as restaurant Raketa, later the Varshava, and on 18 December 2012 Nikolay Grigorov and Petar Topalov relit it as a rakia bar in full socialist dress. Opera televisions, VEF radios and pioneer badges are curated to museum pitch, and the kitchen argues the canteen classics into the present. The cellar runs past two hundred rakias from across the Balkans. Order a grozdova with a shopska and let the era argue with itself. The room packs tight and runs loud, which is half the point. Travellers were still filing verdicts on the first of August, so book ahead and go from eleven in the morning.

Halbite, Tri Ushi
The Mugs keep three doors in Sofia, and this is the quiet one at Tri Ushi 13, five minutes off Vitosha boulevard with a no frills garden hidden at the back. The chain began in 2000 at the Malkite Pet corner and has poured by the halba ever since, Bulgarian lagers alongside Czech, German and local craft. The kitchen holds up its end of the bargain. Order a halba of Bulgarian lager and the meatballs off the grill, which a July 2026 table rated the best of the night. A weekly lunch menu goes up on the house site, dated to the day. Football on the telly, locals at the bar, nothing to prove. It is the people's chamber in session daily from eleven to midnight.

Pod Lipite
Under the Lindens has held its corner by the Borisova garden since, by its own count, 1926, and the room is toasting the centenary this year. Embroidered cloth, a fireplace at the door and a menu that treats the national kitchen as heritage. The house claims Elin Pelin, Dora Gabe and Elisaveta Bagryana among old regulars, and the street outside now carries the writer's name. Order kyufte and kebapche off the coals with a garlic pitka, or go deeper into the chorbadzhiyski sach. A kebapche runs 5.28 leva, pocket money for a century of practice. Much of the larder comes off the restaurant's own farm, bread included. Book a day ahead; the coals run daily from noon to eleven.

Hambara
An unmarked wooden door at 6 September 22, at the back of a residential yard. Knock, wait, and a barn opens that has never met electricity, lit wall to wall by dripping candles, room folklore holding it was once a secret printing house. Seating is stumps, benches and crates under a two storey timber dark, jazz on the good nights, smoke on all of them. Order a glass of red wine by candlelight and pay in cash, because cards have no business here. Photographs are frowned on; in May 2026 the waitress ruled, this is not a museum. Doors open in the evening, roughly nine until three. Sofia's best kept open secret is still, verifiably, open.

Sense Rooftop Bar
A glass box on the ninth floor of the Sense Hotel, staring straight at the gold domes of Alexander Nevsky and lit like a verdict at night. The windows retract in summer and the whole boulevard arrives with the dusk. The February 2026 list keeps rakia by the 50 ml pour, Kulturna Special Reserve 2005 included, next to the house cocktails. Order one last rakia and let the cathedral settle the argument. Smart casual after six in the evening, no shorts and no flip flops, and the room runs to one or two in the morning depending on the night. The National Assembly shares the frame, and if the sunset matters to you, reserve ahead. Ruling entered, bed one floor down.
