Rome does not hurry and neither does this route. A beer and ice depot near the Corso, a standing wine room by the Argentina, then over the river into Trastevere for a plate, a cheap Peroni in a piazza with a reputation, and a cocktail in an old mechanic's garage.
Two August warnings. Roma Sparita carries a ready-made closure banner in its own page, switched off but reading closed for holidays from 14 to 31 August, so assume it is shut in that window and ring +39 06 5800757. And Ferragosto, 15 August, is the day that actually closes Rome, more than the month does. Three of these five are in Trastevere, which does not empty in August so much as invert: the Romans go and the visitors do not. Go in the morning if you want the rione the residents know, and walk out of the alleys before you look for a taxi, because they will not come in at the weekend.

Antica Birreria Peroni
Peroni sold ice as well as beer, and merged with the Roman artificial ice company in 1901, so its depots around the city handed out both. Bottles went into concrete tubs under finely crushed ice and a heavy cloth, then out by handcart to the streets around. The brewery's own archive counts two of those depots still trading and this is one of them, under other owners now. The house dates itself to 1906 and its own Italian history page says only the early nineteen hundreds. Albani painted the rooms in the twenties. Bucatini all'amatriciana, no bookings, closed Sundays.

Il Vinaietto
A counter and two small rooms near Largo Argentina, bottles shelved by region, nothing to eat but taralli and crisps. It began as a vino e olio, a bulk wine and oil shop, some time in the sixties, and Marco and Giancarlo took it on in 1988; both of those dates come from retellings rather than paper, so hold them loosely. The mescita, the list poured by the glass, changes almost daily, which is the reason to come. This is the one stop on this road we could not prove is open. It has no website at all. Ring before you go.

Roma Sparita
Anthony Bourdain filmed the cacio e pepe here for No Reservations, and it was 2010, not the 2011 everyone prints; the confusion comes from his next Rome trip, when he ate the same dish at a different restaurant actually called Cacio e Pepe. He kept this address off the air. The company dates from 1989 and the family has never left. The pasta is still on the menu at sixteen euros. The parmesan basket it arrives in is not described anywhere in the current card, so we cannot promise it. A critic who loves the place calls the cooking comfortable rather than remarkable, and the piazza exceptional. That is the honest pitch.

Bar San Calisto
Marcello Forti did not found this in 1969, he bought it: the bar was already trading and their own history says so. His son Valerio runs it beside him. It closed for six weeks at the start of 2026 for the first refit in forty years, so our chipped tables are gone: the counter has a marble top now and the second room has a honeycomb floor, though the football pennants and the photographs of Falcão and Di Bartolomei stayed up. Romans took the old tiles home. A 66cl Peroni for under three euros, drunk standing in the piazza. Their holiday is January, so August is safe.

Freni e Frizioni
Brakes and clutches, which is what the workshop did before a group of friends from Turin opened a bar in it on 4 July 2005. The old trade plate is still on the wall. The founders are still partners, there is no group above them, and it sat fifty third in the world's fifty best bars in 2024. One correction: the aperitivo buffet everybody writes about is described in the past tense by the best Italian sources, so we are not promising it. What is certainly current is a gin tonic poured from the tap, which is what the room actually drinks, and a list called Freni 2.0.
