Five rooms where the famous claims mostly fail and the paperwork is better than the legend. Two of them are protected monuments and in both cases it is the inside that is listed, not the front, which is the reverse of what everybody assumes.

Harry's New York Bar
It claims four cocktails and gets to keep about half of one. Harry MacElhone's own 1922 book credits the Sidecar to a barman at Buck's Club in London. The drink printed as 75 in that same book is calvados, gin, grenadine and absinthe, nothing like a French 75, and a rival credits Henry's Bar around the corner. The White Lady is his, but he made it in London. Only the Bloody Mary half survives, and Petiot admitted he finished it in New York. Order the Boulevardier instead: MacElhone printed it in 1927 and credited the man who asked for it.

La Palette
Listed since 23 May 1984, and the order names exactly what it protects: the shopfront and the inside of the second room. The register dates that fabric to the second quarter of the twentieth century, so the 1902 in circulation cannot be right about the room you are looking at. The Picasso and Cézanne roster is traceable folklore: a critic wrote that you could imagine meeting them here, and listicles turned imagining into attendance. Chirac genuinely did sit outside. Take the terrace on rue Jacques-Callot, which is the dealers' one and the reason to come.

Bouillon Chartier
Protected by order of 13 April 1989, and read the wording: it lists the interior decoration and not the façade at all. The room is the monument. The house says 1896 and the state dates the salle to 1898 and 1899, so the room you queue for is not the one it claims. You do queue, in the courtyard, and you share a table, and the waiter still writes on the paper cloth. There are no prices on the carte at all, only floors: starters from one euro, mains from seven. Œuf mayo, then bœuf bourguignon aux coquillettes. Open every day of the year.

Chez Georges
The one on rue des Canettes, not the bistro of the same name across the river, and we checked: the national address register puts our pin two metres from the door. There is a bar at street level and a vaulted cellar underneath, and the cellar is the point. It was a cabaret of the chanson à textes and turns up in the biographies of singers who worked it. We are not going to give you a founding year, because the ones in circulation are in no dated source we could reach, and the current operator only dates from 2011. Wine at the comptoir first, then go down.

Le Select
This one earns its literary claim and the others on the boulevard do not. Count the cafés in The Sun Also Rises: the Select appears eleven times, the Rotonde five, the Dôme three and the Coupole none at all, which is awkward for the Coupole since it did not open until after the book. A character even calls it this new dive, which fits a room only two years old. Fitzgerald is folklore and the café's own history admits its list is arbitrary. Order the Hemingway Sour, which is the house winking at all this, or an Americano if you want what the room drinks.
