Hanoi brews its bia hơi every morning and drinks it the same day, which makes it the freshest beer in the world and the cheapest, and the Old Quarter corner where it happens is called the international crossroads by the whole city. One note on addresses: Vietnam abolished and merged its wards on 1 July 2025, so any listing still naming the old Hoàn Kiếm wards is over a year stale.

The crossroads now has its door. Bia Phố Cổ holds the corner house at 18 Tạ Hiện, where Lương Ngọc Quyến crosses at the junction the whole city calls the ngã tư quốc tế, the international crossroads. A glass of bia hơi costs 10,000 dong, brewed that morning and trucked in by keg, which is why the first pour tastes of the day it was made and why nobody keeps it overnight. Order that glass with a plate of nem Phùng or Thanh Hóa sour rolls; the kitchen exists so the beer has company. The city now stages official summer festivals for bia hơi culture on the strength of corners like this one. The pouring starts by mid morning and the street runs past midnight on weekends. Tadioto
Nguyễn Quí Đức came home from exile in 2006 and built the writers' bar of Hanoi: red walls, art on loan from friends, Japanese whisky poured over arguments about everything. Tom Waits once sang here unannounced, and Anthony Bourdain drank here with the owner himself. The room followed its keeper through a demolished arts precinct to the red door at 24B Tông Đản in early 2014, and when Đức died in November 2023 the bar he made kept opening, which is its own kind of memorial. Order whisky and the argument that comes with it; the sushi counter is real too. The intelligentsia's confession booth still hears cases, from morning coffee until around midnight.

Chả Cá Lã Vọng
One restaurant, one dish: turmeric fish sizzling in dill at your own charcoal burner, served by the Đoàn family since 1871 by their own account. The street was renamed after the food, and in 2025 the state agreed in writing: the knowledge of preparing and eating chả cá Lã Vọng entered the National Intangible Cultural Heritage list, certificate handed to the family that December, this house named as its keeper. Family history says the first kitchen doubled as cover for Hoàng Hoa Thám's resistance fund; call that folklore, now folklore with a government stamp. Order the turmeric fish because there is nothing else, about 170,000 dong a portion, in two sittings, lunch and evening. Twenty two chả cá houses now trade on the name; this is the one at number 14 where it began. Case closed, again.

Binh Minh Jazz Club
Quyền Văn Minh taught himself saxophone from smuggled records, opened Vietnam's first jazz club in October 1997 at the Giảng Võ exhibition grounds, and moved it until it settled at 1A Tràng Tiền behind the Opera House. He still owns the room, and his son Quyền Thiện Đắc, conservatory trained where his father once taught, takes the stand beside him. Sets run nightly from 9pm to past 11, and the cover of 100,000 to 150,000 dong buys the music, so order a drink while the students play the changes. Since late November 2025 the band has also played free Sunday afternoons at the Bát Giác pavilion by the lake. History swings here, softly, every night of the week.

Bamboo Bar, Metropole
The grande dame opened in August 1901 and poured for Graham Greene while he worked on The Quiet American in the early fifties. The poolside Bamboo Bar sits directly over the bomb shelter where Joan Baez sheltered through the December 1972 bombing, sealed, forgotten, and rediscovered under the bar in August 2011. Order the house's signature Graham Greene Martini, gin cold enough to remember its novelist, or the gin and tonic that has seen everything. Hotel guests can walk the bunker itself on the Path of History tour, daily at five and six in the evening. The bar keeps colonial hours in the best way, 6am to 11pm, food until 10.30pm. Quorum adjourned, room upstairs.
