2 · The Detour Le Petit Bar
Up into Saint-Michel proper, into a small room of the kind the guidebooks never bother with: dark wood, faded mirrors, older regulars at cards, a counter where the price of a beer has not been rounded up for tourists. Nobody performs anything here. That is the entire recommendation.

3 · The Anchor Au café Fernand, Portugal des saveurs
On the square under the flamboyant Gothic belfry of Saint-Michel, in the quarter that Portuguese, Maghrebi and African families have held for decades, a bar that says Portugal on the sign and means it. This is the anchor because this is the argument: a wine region is not its châteaux, it is the people who pick, haul, cook and pour, and most of them live within a few streets of this one.

4 · The Wildcard Bar Cave de la Monnaie
Down onto the quai de la Monnaie, where the terraces are cheap and the students and the shift-workers drink side by side. A bar-cave is a shop that pours: you can buy the bottle off the shelf or drink it at the table for a couple of euros more, which is the most civilised arrangement in France and somehow still a secret.

5 · The Last Call Central Do Brasil
Rue du Port, and the last one is Brazilian: live music, tapas, cocktails, and a room where the quarter's communities end up mixed at the same tables until two in the morning on a weekend. A city that has spent a fortnight frightened deserves to hear somebody playing. Stay till the band stops.

🎁 Bonus chapter, six hundred metres off the route and worth the detour on the way home: Café Utopia, in the church of Saint-Siméon. Raised between the 14th and 16th centuries, abandoned at the Revolution, then a saltpetre store, a naval school, a sardine cannery, a bicycle shop and a car park before it became a cinema and bar in 1999. Bordeaux does not preserve itself. It makes itself useful again, which is precisely what a burnt forest asks of the people who planted it.
